Peeps in a Pond Trifle + Easter Giveaway


Easter is nearly upon us and as you plan your gathering with family or friends, it might feel quite overwhelming figuring out what to cook, bake, and decorate to make your holiday memorable. In the last couple of years I have not really prepared or done anything for Easter other than attend our church worship services. We are usually very busy with services and just ready to eat dinner together as a family. Family being just our family of four. As we continue to get to know families in our church we occasionally have each other over for lunch or dinner. I was happy to know that we had an invitation extended to us so this year we will be celebrating the resurrection of our Lord and Savior with another family.

When I plan to bring something, I always like making dessert. I find I have the most experience and I can always choose what I would like to eat. Is that selfish? I do not think so but I think it is an advantage. In the past I have not made anything really themed for Easter but I really envisioned a dessert that would be fun to look at and be fun to eat for adults and kids.



I worked on a double chocolate trifle and made sure my marshmallow peeps looked like they were swimming in a pond with layers light blue whipped cream, serving as the pond, chocolate pudding, serving as the dirt, and vanilla cake serving as more dirt. I envisioned something like dirt cake but in a more elegant way. I added bunny rabbits as decoration but can be completely left out for a more simple dessert. Trifles are easy and quick to make and perfect for big groups of people so I look forward sharing with friends soon!

Peeps in a Pond Trifle

Prep Time: 30 minutes
Cook Time: 30 minutes


Ingredients (8-10 servings)
  • 1 recipe vanilla cake mix
  • 2 small boxes dark chocolate pudding
  • 11 ounces white chocolate
  • 3 cups heavy whipping cream
  • blue food coloring
  • 1/4 cup shredded sweetened coconut
  • green food coloring
  • 18 bunny Peeps (optional)
  • 3-4 dark chocolate-dipped Peeps
Instructions

Cake
Prepare white cake as specified on box and divide cake mix between two 9-inch cake pans. Bake according to directions on box and cool for 30-45 minutes. Using the trifle bowl as a biscuit cutter, turn trifle bowl upside down and cut out a cake circle. This is the cake layer needed for the trifle. Repeat with the second 9-inch cake.

Pudding
Prepare the two packages of chocolate pudding as instructed on box and chill for 10 minutes or until set.

White Chocolate Mousse
Bring 1 cup whipping cream to a boil then add the white chocolate chips and decrease heat to medium and mix well until all melted. Cool white chocolate mixture in an ice bath for 20-30 min.
Before whipping the cream, add 2-3 drops of blue food coloring to 2 cups of cream to make a light blue hue. Using a hand held mixer, whip 2 cups of whipping cream until they reach stiff peaks. If the blue is not water color, add more to your liking. Fold the cooled white chocolate mixture into the whipped cream until well combined.

Assemble the trifle
Add a cup of chocolate pudding to the bottom of an 8-10 cup trifle bowl. Place one cake layer on top of the pudding and press cake down. Add another cup of chocolate pudding and then divide the white chocolate mousse and pour on top of pudding.

Here you have the option of adding the bunny Peeps as a decoration.
Add another cake layer and press layer down. Add the rest of the pudding and end with the whipping cream. Add blue food coloring streaks to create waves, but that is optional too.

Prepare the shredded coconut by adding 1-2 drops of green food coloring. Mix or toss well until the color is evenly distributed. This serves as grass. Add the grass as a topping to only a 1/4 of the whipped cream topping. Place chocolate-dipped Peeps in any way you desire.

Refrigerate for 2 hours to set or overnight and serve.

Place a third of the white chocolate mousse on top of the cake
Add half of the chocolate pudding on top of the mousse
