Usually my go-to dairy intake comes from cheese. I usually cannot get enough of it and I love tasting and using all kinds of cheese in my meals. The most important meal of my day is always breakfast. I really try to have a well-rounded meal with eggs, veggies and cheese to give me the biggest protein-packed meal for my busy days with my toddlers.
I usually start with a 3-egg base and saute a variety of veggies but usually my favorite combination is a mushroom spinach combo with spices. I add cream cheese bits to the egg mixture and pour it into my non-stick skillet and let it cook. I flip it over and add the sauteed veggies with about 1/4 cup of shredded cheddar and fold over. I then add another 1/4 cup of cheddar over the top of the omelette. So delicious and it keeps me going until a little past lunch when the girls keep me busy.
The omelette is so versatile and so I change up the cheese with swiss or Monterrey jack cheese. I sometime add milk to my egg mixture to make a fluffy omelette but no all the time.
